巧克力慕斯
【材 料】
蛋糕
低筋麵粉····································60g
可可粉 ·······································20g
牛奶···········································70g
玉米油·······································40g
白糖···········································60g
雞蛋···········································4個
慕絲餡
巧克力········································80g
牛奶··········································150g
白糖 ···········································50g
淡奶油·······································200g
魚膠片········································ 2片
【做法步驟】

所有蛋糕材料備用

把蛋黃和蛋清分開,蛋黃,牛奶,玉米油一起拌勻,篩入低筋麵粉拌勻成蛋黃糊。

蛋清加糖打發城乾性發泡。

把蛋白霜分次加入到蛋黃糊中翻拌均勻,成蛋糕糊。

入模具,烤箱170度18分鐘即可拿出晾涼備用。(硅膠模具可以烤蛋糕也可作為慕斯模具,很方便。

模具洗凈,慕斯糊材料備用,把巧克力放到牛奶中加熱拌勻,魚膠片冷水泡軟。

牛奶巧克力液過篩,
加入魚膠片拌勻。

淡奶油加糖打發,
倒入巧克力奶液。

拌勻成慕斯糊。

因為是夾心慕斯,所以第一層把慕斯糊倒入模具,第二層加入蛋糕片,留一些厚度,第三層再倒入慕斯糊,放入冰箱冷凍。。
凍好以後直接脫模即可
